Does vacuum marinating really work?
It works. It’s just physics. Vacuuming out air creates lower pressure inside the container. Lower pressure acts like suction, and the liquid ‘rushes’ into the meat much faster than during normal osmosis (marinating).
Can you use a vacuum sealer to marinate?
Before you can start the marinating process, you’ve got to pick your favorite sauce to soak your food in. After you’ve picked the perfect marinade, gently open a resealable vacuum sealer bag and put your food in the bag. If you’re making meat, cut it into bite-sized pieces so the marinade can cover more of the food.
How does a vacuum Marinator work?
It works by drawing a vacuum through the lid, and then the drum will rotate in order to coat the meat in the marinade. It has a timer to let you pick how long to marinate the meat. It claims to work in 15 minutes, but many owners prefer to let it go for 30 minutes to an hour to get a better flavor penetration.

Are FoodSaver® Canisters dishwasher-safe? The base of the canisters can all be washed in the dishwasher. The bases should only be placed in the top rack of the dishwasher. The lids should be washed by hand.

How to do rapid infusion:
- Place meat or other food in vacuum bag.
- Add marinade to bag, careful to keep seal area dry (bag stand may help with this)
- Place bag in chamber sealer, and run two full cycles.
- Remove bag and place in refrigerator until ready to use (a few hours in the refrigerator will improve flavor even more)
Can you vacuum seal a brine?
If you’re using a bowl, make sure you use something to keep your meat submerged in the brine. This is why we love using a ziploc or vacuum sealed bag. It makes sure all meat is covered with liquid.
